Ingredients You Need

The ingredients are similar to those in classic guacamole, with the addition of two high-protein ingredients: green peas and edamame. I know, I know what these are doing in there, but trust me that this recipe is just as creamy and delicious as usual.

Peas or Edamame: where the plant protein in this recipe is coming from. Both are great plant-based protein sources that blend right in. Edamame has a bit more protein if you wanted to choose one or the other. 

Red Onion: red onion is the best onion for guacamole. It brings a sharper, slightly sweet bite and a pop of acidity that balances the avocado's richness. It also doesn't go soft and over power the flavors, the way yellow onion can. It also adds a nice pop of color against the green!

Hatch Green Chili: these bring that signature smoky, earthy heat that makes this guac taste like guac, milder than a jalapeño but with more depth. Can't find them? A roasted poblano works in a pinch.

Ingredients

  • 1 cup green peas thawed if frozen
  • 1 cup edamame  thawed first if using frozen, then removed from the pods, look for pre-shelled frozen edamame to save a step)
  • 1 4 ounce can Hatch green chile already peeled; mild works well if you're not sure about spice level
  • 1 jumbo avocado halved and pit removed
  • 1 tablespoon lime juice
  • ½ teaspoon chili powder
  • 1 teaspoon cumin
  • 1 medium Roma tomato cut into small ¼-inch cubes
  • ½ small red onion cut into small ¼-inch cubes
  • 1 whole jalapeno seeds and white membrane removed, then finely chopped 
  • 2 cloves garlic minced
  • 2 tablespoons chopped fresh cilantro, and more for garnish

Instructions

  • In a medium bowl, scoop the avocado out of its skin and add the peas and edamame. Use a fork to mash everything together until mostly smooth, leaving a few small chunks for texture. For extra smoothness you can puree in a food processor.
  • Stir in the remaining ingredients (chile, lime juice, chili powder, cumin, tomato, onion, jalapeño, garlic, and cilantro) until well combined.
  • Cover and chill in the fridge for 15 minutes. This helps the flavors blend together.
  • Serve with baked tortilla chips or jicama sticks, and top with extra cilantro if you'd like.
