    Cherry Pistachio Granola (Eleven Madison Park Copycat Granola!)

    A few years ago, I had the best granola that I’ve ever had in my life. It was from Eleven Madison Park. This was pre my New York City craze, and I got the granola from SELFs 2023 Pantry Awards taste testing project. After the jar was gone I went to buy more, but I couldn’t justify the price of $39 plus $15 shipping. A total of $54  for an 18.7-ounce jar of granola. So instead I made a copycat Eleven Madison Park granola at home for about ten bucks for nearly 50% more granola!

    What is Eleven Madison Park?

    Eleven Madison Park is one of the most prestigious vegan restaurants out there. For me, it’s a total bucket-list spot that I can’t wait to experience one day. Not only is it a fine dining vegan restaurant, which is rare, but it’s also in my favorite city, New York. Cue Frank Sinatra. NEW YORK, NEW YORK. 

    The restaurant sits in Manhattan overlooking Madison Square Park and is run by Daniel Humm, a Michelin-starred and James Beard Award winning chef. This man can cook and he’s backed by an incredible, highly skilled team that brings his vision to life.

    Eleven Madison Park started as a fully plant-based restaurant in 2021 and earned three Michelin stars the following year. It was the only fully vegan restaurant in the Michelin Guide until October 2025, when animal-based proteins returned to the menu. That decision didn’t sit well with many plant-based eaters and stirred quite the conversation in the vegan community.

    Estimated Total Cost of Dining at Eleven Madison Park

    Even with all the drama, Eleven Madison Park is still incredibly popular. Reservations open on the first of each month at 10 a.m. through Resy, and I’m writing this on the seventh and only two slots are still available.

    The restaurant offers two tasting options: a Bar Tasting with 4-5 courses and a Full Tasting Menu with 7-8 courses. 

    Eating here doesn’t come at a small price. The Bar Tasting is $225 per person, and the Full Tasting Menu is $365 per person, plus tip. Both are final sale and non-refundable. I was curious what the total would be, so I broke it down based on a two person table and included a 20% tip. 

    Full Tasting: $730 + $146 tip = $876
    Bar Tasting: $450 + $90 tip = $540

    Looking at those prices, it’s easier to see why the granola comes at a high price point; fine dining has its own categorization of pricing tiers. 

    Making Granola at Home (Cost Comparison Chart)

    Making a copycat Eleven Madison Park Granola is a way to create luxury at home easily. But honestly, after seeing a bill of nearly $900 a $54 jar of granola doesn’t seem half bad until you break it down ingredient by ingredient. Below is how much it cost for the whole copycat recipe.

    My copycat recipe makes 7 cups of granola. A typical serving of granola is ½ cup, which yields 14 total servings in this recipe. Eleven Madison Park's 18.7-ounce glass jar holds about 4¾ cups of granola for $54. 

    Ingredients You Need

    These are the ingredients listed on the jar of the cherry pistachio granola. 

    Ingredients for Cherry Pistachio: Gluten-Free Rolled Oats, Maple Syrup, Extra Virgin Olive Oil, Light Brown Sugar, Cherries (Montmorency tart cherries, apple juice concentrate, sunflower oil), Pistachios, Coconut, Sunflower Seeds, Brown Flax Seeds, Pumpkin Seeds, Salt

    Of course, the ingredient list doesn’t provide amounts, so I did some work to recreate this Eleven Madison Park Copycat granola at home.

    Rolled Oats: A great source of fiber, oats help keep you full and support healthy digestion. They also provide complex carbs for steady energy.

    Pistachios: These nuts add crunch and healthy fats, plus protein and antioxidants that support heart health.

    Pumpkin Seeds: Rich in iron, magnesium, and zinc, pumpkin seeds are excellent for plant-based eaters looking to support energy and immune function.

    Dried Cherries: Naturally sweet and tart, dried cherries provide antioxidants and a touch of potassium, which supports heart and muscle health.

    Whole Flax Seeds: These tiny seeds add fiber, omega-3s, and lignans, but since they are whole, your body may absorb fewer nutrients than ground flax. They still add crunch and a mild nutty flavor to granola.

    Cherry Pistachio Granola (11 Madison Park Copycat Granola!)

    Servings: 14 ½ cup servings

    Ingredients

    • 3 cups rolled oats gltuen free if needed!
    • ½ cup raw pistachios (shelled, roughly chopped)
    • ½ cup unsweetened coconut flakes (wide flakes if possible)
    • ⅓ cup raw sunflower seeds 
    • ⅓ cup cup raw pumpkin seeds / pepitas
    • 2 tablespoons whole brown flax seeds
    • ½ teaspoon fine sea salt 
    • ⅓ cup pure maple syrup 
    • ¼   cup light brown sugar, packed
    • ⅓ cup extra virgin olive oil 
    • ¾ cup dried tart cherries (look for Montmorency that’s what EMP uses!) 

    Instructions

    • Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper.
    • Combine the dry ingredients in a large bowl: oats, pistachios, coconut flakes, sunflower seeds, pumpkin seeds, flax seeds, and salt.
    • Whisk together the wet ingredients in a small bowl: maple syrup, brown sugar, and olive oil. Pour this over the dry mixture and stir until everything is evenly coated.
    • Spread the mixture into a thin, even layer on the prepared baking sheet.
    • Bake for 20 to 35 minutes, stirring once halfway through (IF you don't want it clustered). Once the color is golden brown and smells aromatic.
    • Cool completely on the pan. The granola will get crunchier as it cools.
    • Stir in the dried cherries once cooled, then transfer to an airtight container.

    If you want bigger clusters, press the mix firmly into the pan before baking
